INGREDIENTS:

  • 2 cups red beans
  • 16 cups water
  • 4 tablespoons olive oil
  • 2 teaspoons salt, plus more to taste
  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, peeled and minced
  • 1/2 teaspoon cayenne pepper
  • 1 cup tomatoes, diced
  • 3 ripened plantains, peeled and sliced diagonally
  • 1 cup canola oil
  • Pepper, to taste

 

INSTRUCTIONS:

  1. Prepare and Soak Red Beans: Begin by rinsing the red beans thoroughly to remove any debris or impurities. Place the rinsed beans in a large pressure cooker.
  2. Pressure Cook the Beans (First Round): Add 8 cups of water to the pressure cooker with the red beans. Lock the lid into place and bring the cooker to high pressure for 1 minute. Afterward, remove it from heat and perform a quick-release of the pressure.
  3. Drain and Soak Again: Drain the water from the pressure cooker, rinse the beans once more, and then return them to the cooker with the remaining 8 cups of water. Allow the beans to soak in this water for about 1 hour.
  4. Season and Pressure Cook (Second Round): Add 2 tablespoons of olive oil and 2 teaspoons of salt to the soaked beans in the pressure cooker. Lock the lid into place and bring it to high pressure. Maintain high pressure for 11 minutes, then remove the cooker from heat and let the pressure release naturally. The beans should be tender and flavorful.
  5. Prepare the Aromatic Mixture: While the beans are cooking, you can prepare the aromatic mixture that will add depth to the dish. In a separate pan, add the remaining 2 tablespoons of olive oil and heat it over medium heat. Sauté the diced onion until it becomes caramelized and slightly translucent. Add the minced garlic, ginger, and cayenne pepper, and sauté for an additional 1 minute until fragrant. Finally, add the diced tomatoes and let the mixture simmer for 3–5 minutes until it forms a flavorful base.
  6. Combine the Aromatic Mixture: Add the sautéed aromatic mixture to the cooked red beans in the pressure cooker. This step imparts a wonderful blend of flavors to the dish.
  7. Prepare and Fry the Plantains: Peel and slice the ripened plantains diagonally into medium-sized pieces. In a separate pan, heat the canola oil over medium-high heat. Fry the plantain slices until they turn golden brown and slightly crispy on the outside, which should take about 2–3 minutes per side. Remove the fried plantains from the oil and place them on a paper towel to remove excess oil. Season with salt and pepper to taste.
  8. Serve and Enjoy: To serve, arrange the flavorful red beans alongside the fried plantains. The creamy beans and sweet plantains complement each other beautifully, creating a delicious and balanced meal inspired by West African cuisine.
