  • 1¼ teaspoons salt
  • 1 teaspoon grated lemon peel
  • ¼ teaspoon ground nutmeg
  • 3¼ to 3¾ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 egg, beaten

 

GLAZE:

  • 1½ cups confectioners’ sugar
  • 2 teaspoons lemon juice
  • 2 to 3 tablespoons water
  • Green, purple, and yellow sugars

 

PREPARATIONS:

  1. In a large bowl, dissolve the yeast in warm water. Add ½ cup sugar, softened butter, warm milk, egg yolks, salt, grated lemon peel, nutmeg, and 2 cups of flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (the dough will be sticky).
  2. Turn the dough onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place the dough in a greased bowl, turning it once to grease the top. Cover and let it rise in a warm place until doubled, approximately 1 hour.
  3. Punch the dough down and turn it onto a lightly floured surface. Roll it into a 16×10-inch rectangle. Roll up the dough jelly-roll style, starting with a long side, and pinch the seam to seal.   4. Bake the cake at 375° for 25-30 minutes, or until it turns golden brown. Allow it to cool completely on a wire rack.
