  • 2 tbsp dry white wine
  • 2 tbsp heavy cream
  • 1 tbsp lemon juice
  • Snipped chives, to garnish

 

INSTRUCTIONS:

  1. Sauté Onion: In a heavy-based pan, heat the olive oil and cook the sliced onion over medium heat for 6–8 minutes, or until it becomes soft and translucent.
  2. Add Leeks, Potatoes, and Spices: Add the leeks, diced potatoes, saffron, and ground cumin to the pan. Pour in the hot chicken stock and season with salt and freshly ground black pepper. Cover the pan with a lid and bring the mixture to a boil.
