1 tablespoon coriander seeds
1 tablespoon whole cloves
6 star anises
1 cinnamon stick
1 tablespoon fennel seed
1 tablespoon whole cardamom
4 knobs fresh ginger, sliced
1 onion, sliced
1 quart No-Beef Broth
1 teaspoon soy sauce
8 ounces Vietnamese rice noodles
1 cup shredded seitan
1/2 cup chopped cilantro
1/2 cup chopped Thai basil
2 cups mung bean sprouts
1/2 cup sliced scallions

INSTRUCTIONS

In a dry nonstick skillet over medium heat, add the coriander seeds, whole cloves, star anises, cinnamon stick, fennel seed, whole cardamom, ginger, and sliced onion. Toast everything for about 5 minutes, stirring occasionally, until the spices become fragrant and the onion and ginger are lightly caramelized. Transfer the toasted mixture into a cheesecloth packet and tie it securely.

Place the cheesecloth packet into a 4-quart slow cooker. Pour in the No-Beef Broth and stir in the soy sauce. Add the Vietnamese rice noodles and shredded seitan. Cover and cook on low for 4 hours so the flavors can fully develop.

Once cooking is complete, carefully remove the cheesecloth packet, making sure no spices fall back into the soup. Discard the packet.

Ladle the hot Pho into serving bowls. Top each bowl with chopped cilantro, Thai basil, mung bean sprouts, and sliced scallions. These fresh toppings add brightness, crunch, and balance to the rich broth.
