INGREDIENTS:

  • 34 fl oz/1 liter Beefeater 24 gin
  • 10 fl oz/300ml Domaine de Canton ginger liqueur
  • 10 dashes Regan’s orange bitters
  • 32 fl oz/950ml homemade lemon & honey shrub (see recipe below)
  • 16 fl oz/470ml unfiltered/cloudy apple juice
  • 16 fl oz/470ml chilled water
  • 25 fl oz/750ml Perrier Jouët champagne
  • Ice cubes or block
  • 3 lemon wheels spiked with cloves & nutmeg (for garnish)

 

PREPARATIONS:

  1. In a large punch bowl (4.2 or 5.2 quarts / 4 or 5 liters), mix together Beefeater 24 gin, Domaine de Canton ginger liqueur, Regan’s orange bitters, homemade lemon & honey shrub, unfiltered apple juice, and chilled water.
  2. Chill the punch bowl over a large block of ice.
  3. Just before serving, pour in the Perrier Jouët champagne to add a sparkling touch to the punch.
  4. Add ice cubes to keep the punch chilled throughout the event.
  5. Garnish the punch bowl with three lemon wheels spiked with cloves and a light grating of nutmeg for an exquisite presentation.

 

YIELD: This recipe yields approximately 150 fl oz/4.4 liters of The Ravenmaster Royale Punch.

  3. In a pan over medium heat, simmer 10 fl oz/300ml water and scant 3/4 cup/220g honey. Add the oleo-saccharum and stir until all the sugar has dissolved. Remove from heat.
  4. Juice the lemons (approximately 13 1/2 fl oz/400ml of juice) and add it to the syrup. Allow the mixture to cool.
  5. Strain out the lemon peel, pulp, and sugar, leaving approximately 34 fl oz/1 liter of shrub.
  6. Store the homemade lemon & honey shrub in the refrigerator for up to 1 week.
