This is rich and filling. The texture is quite different, depending on whether you use shredded or cubed cheese, but they’re both good.

YIELD: 2 servings

INGREDIENTS:

  • 1 1/2 cups shredded or diced mozzarella
  • 1/4 cup sliced scallions
  • 1/2 cup diced celery
  • 1/4 cup mayonnaise
  • 2 tablespoons wine vinegar
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil

 

INSTRUCTIONS:

  1.  Combine the mozzarella, scallions, and celery in a mixing bowl.
  2.  In a separate bowl, combine the mayonnaise, vinegar, oregano, and basil. Pour the mixture over the salad, stir to combine, and serve.

 

PER SERVING:

  •  6 grams of carbohydrates and 2 grams of fiber, for a total of 4 grams of usable carbs and 20 grams of protein.
