SALT AND PEPPER STEAK RUB

MAKES about ¹∕³ cup

INGREDIENTS:

  • 2 tbsp coriander seeds
  • 2 tbsp black peppercorns
  • 2 tsp coarse salt
  • 2 tsp dehydrated minced garlic

DIRECTIONS:

  1. In a dry skillet, toast coriander seeds and peppercorns over medium heat, shaking the pan often, until fragrant, about 4 minutes. Let cool.
  2. In a spice mill or clean coffee grinder, coarsely grind together coriander seeds, peppercorns, and salt.
  3. Transfer the mixture to a small bowl and stir in the garlic.
  4. To use, see “Using Rubs” below. (Make-ahead: Store in an airtight container for up to 3 months.)
