INGREDIENTS:

  • 12 large raw prawns, peeled and deveined
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon sesame seeds
  • 100g/4oz fresh white breadcrumbs
  • 2 tablespoons chopped fresh coriander leaves
  • 1 egg, lightly beaten
  • 2 teaspoons chilli sauce
  • Plain flour for dusting
  • Olive oil for frying
  • 75g/3oz mayonnaise
  • 1 spring onion, finely chopped
  • 1 tablespoon tomato ketchup
  • 1 teaspoon Worcestershire sauce
  • 4 hamburger buns, halved

 

PREPARATION:

  1. Flatten the prawns slightly to open them out and place them in a bowl. Mix in the freshly squeezed lemon juice, ensuring the prawns are well-coated.
  2. On a sheet of baking parchment, combine the sesame seeds, fresh breadcrumbs, and chopped coriander.
  3. In a separate bowl, whisk together the egg and chilli sauce.
  4. Dredge each prawn in plain flour, shaking off any excess. Dip the floured prawns into the egg mixture, ensuring they are well-coated. Press the prawns firmly into the breadcrumb mixture, making sure they are fully coated. Place the coated prawns on a tray lined with baking parchment, cover, and chill for 10 minutes.
  5. Heat a small amount of olive oil in a frying pan over medium heat. Cook the prawns in batches for approximately 2-3 minutes on each side until they turn golden and are cooked through. Remove the cooked prawns from the pan and drain on kitchen paper to remove any excess oil.
  6. In a bowl, combine the mayonnaise, finely chopped spring onion, tomato ketchup, and Worcestershire sauce to make the sauce.
  7. Place the cooked prawns on the hamburger buns and serve with the sauce.
