- 2 Onions
- 250g Floury Potato
- 2 Celery Sticks
- 5 Bay Leaves
- 2 Vegetable Stock Cubes
- 3 tablespoons Olive Oil
- 500g Carton Passata
- 1 tablespoon Red Wine Vinegar
- 1 tablespoon Sugar
- 250ml Whole Milk
INSTRUCTIONS:

- In your largest saucepan, gently heat the olive oil, onions, and celery until they become soft and translucent.
- Add the potatoes and carrots, along with all the remaining ingredients, except for the milk, to the saucepan. This includes the cherry tomatoes, carton passata, vegetable stock cubes, bay leaves, red wine vinegar, and sugar. Add 1 liter of water as well.
- Bring the mixture to a low boil, then reduce the heat to low.
- Cover the saucepan and let the soup simmer for 30 minutes. Then, uncover it and continue simmering for another 30 minutes.
- Remove and discard the bay leaves from the soup mixture.
- Using a hand blender, carefully blend the soup until it becomes smooth and homogeneous.
- Pour in the milk and adjust the consistency with additional water as needed.
- Season the soup with salt and pepper to taste.
