POTATOES STUFFED WITH GOAT CHEESE

INGREDIENTS:

  • 1 3/4 lbs. (800 g) potatoes
  • 5 oz. (150 g) fresh goat cheese
  • salt and pepper

 

INSTRUCTIONS:

  1. Heat the oven to 350°F(180°C).
  2. Wrap the potatoes individually, skin on, in aluminum foil and bake for about 30 minutes.
  3. When cool enough to handle, cut them open.
  4. Season with a pinch of salt, top each with some of the fresh goat cheese and a sprinkle of pepper, and serve.
