SERVES 6-8

INGREDIENTS:

  • Water, as needed
  • 1 pound linguine
  • 2 teaspoons olive oil
  • 2 garlic cloves, slivered
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoons capers
  • 1/4 cup Kalamata olives, pitted and halved
  • 1 teaspoon dried red pepper flakes
  • 1 tablespoon brine (juice from the olives)
  • 1 (14-ounce) can crushed tomatoes, drained
  • Salt and pepper, to taste

INSTRUCTIONS:

  1. Cooking the Linguine: Begin by filling your pressure cooker with enough water to generously cover the linguine. Bring the water to a boil, creating the ideal environment for cooking your pasta.
  2. Once the water reaches a rolling boil, add the linguine to the pot. Lock the lid into place, and with the pressure cooker set to high pressure, cook the pasta for 6 minutes. Employ the natural-release method to release the pressure, then carefully remove the lid. Drain the cooked linguine using a colander and set it aside.
  3. Sautéing the Flavors: Heat the olive oil in a sauté pan over medium heat. As the oil warms, add the slivered garlic and cook it for 2 to 3 minutes. The garlic will become aromatic and slightly golden.
  4. Stir in the fresh basil, capers, halved Kalamata olives, and the dried red pepper flakes. Continue to sauté these ingredients for an additional 2 minutes. Their combined aromas will awaken your senses.
  5. Crafting the Puttanesca Sauce: Add the tablespoon of brine from the Kalamata olives to the sautéed mixture. Incorporate the drained, crushed tomatoes into the pan as well.
  6. Reduce the heat to low and allow this flavorful concoction to simmer gently for 10 to 15 minutes. The sauce will thicken and become rich, making your kitchen smell heavenly. Season your Puttanesca sauce with salt and pepper to taste.
  7. Bringing It All Together: Combine the luscious Puttanesca sauce with the cooked linguine, ensuring that every strand of pasta is generously coated in this flavorful creation.
