If you’re not familiar with poutine, it’s a Canadian dish typically made of French fries, cheese curds and gravy. For our vegan version, we use homemade Fries (Baked or Fried), vegan Mozzarella and a mushroom-based gravy. Even if you’ve never had poutine before, we highly recommend you try this dish.

Some accounts attribute its creation to a diner in Drummondville, Quebec, while others claim it was first served in Warwick, Quebec. Regardless of its exact origin, poutine quickly became a beloved Canadian staple.

While the classic poutine remains a favorite, numerous variations have emerged over the years. Creative toppings like pulled pork, smoked meats, sausages, and even lobster have been added to the traditional poutine, offering exciting flavor combinations.

INGREDIENTS:

 

For the Gravy

  • 3 tbsp (42 g) vegan butter (soy-free if needed)
  • ½ cup (40 g) minced crimini mushrooms
  • ½ medium-sized white onion, chopped small (about ½ cup [80 g])
  • 3 cloves garlic, peeled and minced, or 1 tbsp (9 g) jarred minced garlic
  • ¼ cup (31 g) all-purpose flour
  • 2 cups (480 ml) vegetable broth
  • 1 tsp garlic powder
  • 1½ tsp (5 g) onion powder

 

For the Poutine

  • 1 batch Fries (Baked or Fried), hot, or 2½ lb (1.1 kg) store-bought fries, prepared according to the package instructions
  • 6 oz (170 g) vegan Mozzarella, chopped into small cubes and at room temperature

 

INSTRUCTIONS:

 

Making the Gravy

  1. In a large skillet, melt the butter over medium-low heat.
  2. Add the minced mushrooms and chopped onion to the skillet. Cook, stirring often, for 5 to 7 minutes or until the onion becomes translucent.
  3. Stir in the minced garlic and cook for an additional 30 seconds to 1 minute, or until fragrant.
  4. Whisk in the all-purpose flour until it’s completely incorporated into the mixture.
  5. Slowly pour in the vegetable broth, whisking constantly. Increase the heat to high and bring the mixture to a gentle boil while continuing to whisk.
  6. Lower the heat to low, allowing the mixture to simmer. Whisk in the garlic powder and onion powder.
  7. Let the gravy simmer for 3 to 5 minutes or until it thickens. Once thickened, remove it from the heat and set it aside.

 

Assembling the Poutine

  1. Place the hot fries on a serving tray or dish.
  2. Top the hot fries with the room-temperature cubed vegan Mozzarella cheese.
  3. Pour the hot mushroom gravy generously over the fries and cheese.
  4. Serve immediately, allowing the cheese to melt over the hot fries for a gooey, satisfying poutine.
