Apple fritters aren’t just a treat to enjoy during harvest time—they’re a
welcome indulgence any time of year. These fritters are best served warm,
so gather everyone in the kitchen to enjoy them as soon as they’re ready.

16 to 18 fritters
Ingredients:
- 1⅓ cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- 1 cup soda water
- 2 tbsp unsalted butter, melted
- 2 eggs, separated
- 3 sweet baking apples (such as Royal Gala, Golden Delicious or Pink Lady)
- vegetable oil (such as canola, safflower or sunflower oil) for deep-frying
- 2 tbsp icing sugar
Directions:
- In a large bowl, whisk together 1¼ cups of the flour, granulated sugar, baking powder, cinnamon, and salt.
- Whisk in soda water and melted butter.
- Whisk in egg yolks and cover the bowl. Let stand for 2 hours. (Make-ahead: Refrigerate for up to 12 hours.)
- In a separate bowl, beat egg whites until stiff but not dry peaks form.
- Fold the egg whites into the batter.
- Place the bowl in a larger bowl of ice water and let stand until cold, about 15 minutes.
- Peel and cut the apples into ½-inch (1 cm) cubes. Toss with the remaining flour.
- Fold the apples into the batter.
- Meanwhile, pour enough oil into a deep fryer, wok, or wide deep saucepan to come about 2 inches (5 cm) up the side. Heat until the deep-fryer thermometer reads 350°F (180°C).
- Using ¼ cup for each, pour in the batter to make 4 fritters. Cook, turning once, until golden, 3 to 4 minutes.
- Using a slotted spoon, transfer the fritters to a paper towel-lined plate and let drain. Repeat with the remaining batter.
- Sprinkle the fritters with icing sugar and serve warm.
