Spotted Dick is a traditional British dessert that is loved for its comforting and nostalgic flavors. This recipe provides a simple and satisfying way to create a delicious Spotted Dick pudding that is packed with flavors of ginger, dried fruits, and suet. The dry ingredients, including plain flour, baking powder, sugar, and ground ginger, are mixed with fresh breadcrumbs, sultanas, currants, grated suet, and finely grated lemon zest. The wet ingredients, lightly beaten eggs and milk, are then added to form a moist and flavorful mixture. The pudding is shaped into a roll, wrapped in baking paper, and steamed for 1.5 hours until it becomes light and fluffy. It is important to keep an eye on the water level during steaming to prevent the pudding from boiling dry. Serve this delightful dessert with hot custard or fresh cream for a comforting and indulgent treat.

INGREDIENTS:

  • 175g/6oz plain flour
  • 1 teaspoon baking powder
  • 100g/4oz sugar
  • 1 1/2 teaspoons ground ginger
  • 150g/5oz fresh breadcrumbs
  • 50g/2oz sultanas
  • 100g/4oz currants
  • 100g/4oz grated suet
  • 2 teaspoons finely grated lemon zest
  • 2 eggs, lightly beaten
  • 175ml/6fl oz milk

PREPARATIONS:

  • In a large bowl, sift the plain flour, baking powder, sugar, and ground ginger together.
  • Add the fresh breadcrumbs, sultanas, currants, grated suet, and finely grated lemon zest to the dry ingredients. Mix everything together using a wooden spoon.
  • In a separate bowl, combine the lightly beaten eggs and milk.
  • Pour the egg and milk mixture into the dry ingredients and mix well until all the ingredients are thoroughly combined. If the mixture is too dry, add a little more milk. Set the mixture aside for 5 minutes to allow the flavors to meld.
  • Lay a sheet of baking paper on a work surface and shape the mixture into a roll about 20cm/8in long. Roll up the pudding in the baking paper, folding up the ends, but avoid wrapping it too tightly.
  • Wrap the pudding roll in a tea towel and place it in the top of a steamer. Cover the steamer and steam the pudding for 1.5 hours. Make sure to check the water level periodically and replenish it with boiling water if necessary during the cooking process to prevent the pudding from boiling dry.
  • Once cooked, remove the pudding from the steamer and unwrap it.
  • Serve the Spotted Dick pudding warm with hot custard or fresh cream.

YIELD: Serves 4

SPECIAL INSTRUCTIONS:

  • Be careful not to wrap the pudding roll too tightly in the baking paper, as it needs room to expand during the steaming process.
  • Check the water level in the steamer periodically during cooking to ensure it doesn’t boil dry. Add boiling water if needed.
  • Allow the pudding to rest for a few minutes after steaming before unwrapping to ensure it holds its shape.

TIPS:

  • Serve the Spotted Dick pudding with homemade custard for a classic and comforting combination. Alternatively, fresh cream or vanilla ice cream can be used as a delicious accompaniment.
  • For an extra twist, consider adding a splash of rum or brandy to the mixture for a boozy flavor.
  • Customize the dried fruits to your liking by adding raisins, chopped dates, or dried cranberries.
  • Dust the cooked pudding with powdered sugar before serving for an extra touch of sweetness and visual appeal.
  • Leftover Spotted Dick can be stored in the refrigerator for a few days and reheated in the microwave or steamed again before serving.
