Exotic Watermelon and Cheese Salad

The cold sweetness of the watermelon contrasts with the saltiness of the white cheese. The mint adds color and freshness.

SERVINGS: 4–6

INGREDIENTS:

  • 5 cups watermelon
  • 2 cups feta cheese or halloumi
  • 1 handful fresh mint leaves
  • Rosewater in a spritzer

 

INSTRUCTIONS:

  1. Cut the watermelon into bite-sized cubes or triangles and keep them cool and covered in the fridge.
  2. Cut the feta cheese or halloumi into a similar shape as the watermelon and set it aside.
  3. When you’re ready to serve, place a few pieces of watermelon on a plate.
  4. Add a few pieces of cheese on top of the watermelon.
  5. Scatter a few fresh mint leaves over the salad.
  6. Keep a spritzer filled with rosewater ready. Give a light mist of rosewater over the salad.
  7. Serve the watermelon and cheese salad immediately.
