INGREDIENTS:

  • 4 cups Chicken Foot Stock
  • ½ pound shiitakes, thinly sliced, stems reserved
  • 3 Thai chiles, smashed
  • 1 (6-inch) stalk of lemongrass, smashed
  • 1 (1-inch) knob ginger, peeled, skin reserved
  • 6 makrut lime leaves, or 1 lime
  • 2 shallots, peeled and diced, skins reserved
  • 1½ pounds boneless, skinless chicken thighs, chopped into bite-size pieces
  • 1 (13.5-ounce) can full-fat coconut milk
  • ¼ cup fish sauce
  • 1 tablespoon palm sugar
  • Cilantro sprigs, for garnish
  • Thai basil, for garnish
  • Lime wedges, for serving

 

INSTRUCTIONS:

 

Prepare the broth:

  1. Pour the Chicken Foot Stock into a large saucepan and bring it to a simmer over medium heat.
  2. Add the shiitake stems, smashed Thai chiles, smashed lemongrass, peeled ginger skin, diced shallot skins, and makrut lime leaves (or lime) to the simmering broth.
  3. Cover the saucepan and let the broth infuse with the aromas and flavors for about 20 minutes.
  4. Turn off the heat and strain the broth into a pitcher or jar using a fine-mesh sieve, discarding the solids. Set aside.
  5. Wipe the saucepan clean with a kitchen towel to remove any stray debris.

 

Cook the soup:

  1. Return the flavored broth to the saucepan and add the sliced shiitake mushroom caps, sliced ginger, and diced shallots.
  2. Spoon in the chopped chicken thighs.
  3. Stir in the full-fat coconut milk, fish sauce, and palm sugar into the broth.
  4. Simmer the soup over medium heat until the vegetables soften, and the chicken cooks through, turning an opaque white, approximately 25 minutes.
