YIELD: 32 servings of 1 1/2 ounces-a standard “shot.”
INGREDIENTS:
- 2 1/2 cups water
- 3 cups Splenda
- 3 tablespoons instant coffee crystals
- 1 teaspoon vanilla
- 1 bottle (750 milliliters) 100-proof vodka (use the cheap stuff)
INSTRUCTIONS:
- In a large pitcher or measuring cup, combine the water, Splenda, coffee crystals, and vanilla. Stir until the coffee and Splenda are completely dissolved.
- Pour the mixture through a funnel into a 1.5- or 2-liter bottle. Pour in the vodka. Cork, and shake well.
PER SERVING:
- Each will have 2 grams of carbohydrates, no fiber, and the merest trace of protein.
VARIATIONS:
MOCHAHLUA:
- Try this one if you like a little chocolate with your coffee. Just cut the water back to 1 1/2 cups and substitute a 12-ounce bottle of sugar-free chocolate coffee flavoring syrup for the Splenda and vanilla.
- This has only a trace of carbohydrates per shot, because the liquid Splenda used to sweeten the chocolate coffee flavoring syrup doesn’t have the maltodextrin used to bulk the granular Splenda.
MOCKAHLUA AND CREAM:
- This makes a nice “little something” to serve at the end of a dinner party, in lieu of a heavier dessert. For each serving you’ll need a shot of Mockahlua (or Mochalua) and 2 shots of heavy cream. Simply mix and sip!
- Yield: Each Serving has 4 grams of carbohydrates, no fiber, and 2 grams of protein.
