INGREDIENTS

  • Freshly ground black pepper to taste

 

INSTRUCTIONS

  1. Preheat your oven to 450°F (230°C). Place a 9×13-inch baking dish or a deep baking tray in the oven to heat while you prepare the batter.
  2. In a medium-sized bowl, whisk together the all-purpose flour and salt.
  3. Add the eggs to the flour mixture and whisk until well combined. Gradually add the whole milk while continuing to whisk until you have a smooth batter.
  4. Allow the batter to rest for at least 30 minutes. This resting period helps the pudding rise better.
  5. While the batter is resting, heat a skillet over medium heat. Add the chopped bacon and cook until it becomes crispy. Remove the bacon from the skillet and set it aside. In the same skillet, add the chopped fresh sage leaves (or dried sage) and cook for about 1-2 minutes until fragrant. Remove the sage and set it aside with the bacon.
  6. After the resting period, carefully remove the hot baking dish or tray from the oven. Add the 2 tablespoons of bacon fat (or vegetable oil) to the dish and swirl it around to coat the bottom evenly.
  7. Quickly pour the batter into the hot dish and evenly distribute the cooked bacon and sage on top. Season with freshly ground black pepper.
  8. Place the dish back into the preheated oven and bake for about 20-25 minutes or until the pudding is puffed up, golden brown, and crispy.
  9. Remove the Yorkshire Pudding with Bacon & Sage from the oven and serve it immediately while it’s at its crispiest. It’s a delicious side dish for roast dinners, and you can serve it with gravy if desired.
