INSTRUCTIONS:

  • In a nonstick pan, heat the olive oil. Add the sliced onion, minced shallot, and minced garlic, and sauté for 1–2 minutes, or until they begin to soften.
  • Stir in the salt, caraway seeds, black pepper, cayenne, and paprika. This aromatic blend of spices will infuse the dish with its distinctive flavors. Immediately remove the pan from heat.
  • Transfer the onion mixture to a 4-quart slow cooker.
  • Add the thinly sliced red potatoes, Vegetable Broth, and tomato paste to the slow cooker. Gently stir to coat the potatoes evenly with the flavorful mixture.
  • Cover the slow cooker and set it to cook on high for approximately 2 1/2 hours, or until the potatoes are tender. This slow cooking process allows the potatoes to absorb all the delicious flavors and become melt-in-your-mouth tender.
  • Once the potatoes are cooked to perfection, turn off the heat.
  • Stir in the reduced-fat sour cream or vegan sour cream to create a creamy and indulgent sauce that ties all the flavors together.
