INGREDIENTS:

  • 4¼ cups water
  • 1 cup sugar
  • 6 (2-inch) strips orange zest, sliced thin lengthwise
  • 2 carrots, peeled and cut into ¼-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • 1 onion, chopped fine
  • Salt and pepper
  • ¾ teaspoon saffron threads, crumbled
  • ½ teaspoon ground cardamom
  • 1½ cups basmati rice, rinsed
  • ½ cup currants
  • ½ cup dried cranberries
  • ¼ cup sliced almonds, toasted
  • ¼ cup pistachios, toasted and chopped

 

INSTRUCTIONS:

  1. Candy Carrots and Orange Zest: In a small saucepan, bring 2 cups of water and sugar to a boil over medium-high heat. Stir in the sliced orange zest and carrots, then reduce the heat to medium-low and simmer until the carrots become tender (approximately 10 to 15 minutes). Once done, drain the mixture well, transfer it to a plate, and allow it to cool.
  2. Sauté Onion and Add Spices: In a large saucepan, heat the extra-virgin olive oil over medium heat until shimmering. Add the chopped onion and 1½ teaspoons of salt, then cook until the onion softens (around 5 minutes). Stir in the crumbled saffron and ground cardamom, cooking until the fragrance is released (about 30 seconds). Add the rinsed basmati rice and cook, stirring often, until the rice grains’ edges start turning translucent (approximately 3 minutes).
  3. Simmer the Rice: Pour the remaining 2¼ cups of water into the saucepan with the rice mixture and bring it to a simmer. Reduce the heat to low, cover the saucepan, and gently simmer until the liquid is absorbed, and the rice becomes tender (approximately 16 to 18 minutes).
  4. Layer the Candied Mixture and Dried Fruit: Remove the saucepan from heat and sprinkle the candied carrots and orange zest, currants, and dried cranberries over the rice. Cover the saucepan with a clean folded dish towel underneath the lid and let it sit for 10 minutes. This steaming process allows the flavors to meld and the dried fruit to plump up, resulting in a jewel-like appearance.
  5. Add Nuts and Fluff Gently: After the steaming period, add the toasted sliced almonds and chopped pistachios to the rice mixture. Gently fluff the rice with a fork to combine the ingredients while retaining the texture of the nuts.
