INGREDIENTS:
- 2 cups cider vinegar
- ½ cup water
- ¼ cup Worcestershire sauce
- ¼ cup packed dark brown sugar
- 2 tablespoons vegetable or sunflower oil, lard, or bacon drippings
- 1 tablespoon kosher salt or coarse sea salt
- 2 teaspoons Tabasco sauce or other vinegar-based hot sauce
INSTRUCTIONS:
- In a saucepan, combine all of the ingredients.
- Heat the mop sauce before you plan to use it initially and keep it warm over low heat between bastes.
- Apply the mop sauce to large cuts of meat about once an hour and smaller cuts twice per hour during the cooking process.
