MAKES: ABOUT 2 CUPS

INGREDIENTS:

  • Handful of fresh herbs
  • 2 cups extra-virgin olive oil

 

INSTRUCTIONS:

  1. Rinse the herbs well, removing any dried out, bruised, or wilted leaves and stems. Pat them dry and stuff them into a pint-sized jar.
  2. Cover the herbs with the olive oil and set the jar in a window.
  3. Shake the jar every day for 4 to 6 weeks, and return it to the windowsill.
  4. Taste the oil after 4 weeks, and if you prefer a stronger flavor, allow the herbs to continue steeping in the oil for 2 weeks longer.
  5. After 4 to 6 weeks, line a fine-mesh sieve with a piece of cheesecloth and set it over a bowl.
  6. Open the jar and pour the herbs and oil into the sieve.
  7. Discard the herbs and pour the oil into a clean jar.
  8. Store the jar in a cool, dark place and use the oil within 9 months.
