INGREDIENTS:

  • 6 medium Bartlett pears
  • 1/2 cup dry white wine
  • 1 tablespoon fresh lemon juice
  • 3/4 cup sugar
  • 2 orange slices
  • 1 lemon slice
  • 2 whole cloves
  • 1 vanilla bean, split lengthwise
  • 1 cinnamon stick
  • 1/4 teaspoon ground cardamom
  • Pinch of salt

 

INSTRUCTION:

  1. Begin by preparing the pears. Rinse, peel, and core them, then cut them into 1-inch dice.
  2. In your pressure cooker, combine the diced pears, dry white wine, and fresh lemon juice. Lock the lid into place and bring it to low pressure. Maintain this pressure for 8 minutes.
  3. After 8 minutes, remove the pressure cooker from heat and allow the pressure to release naturally for 10 minutes. Quick-release any remaining pressure, then remove the lid. Transfer the cooked pears and their juices to a blender or food processor and purée until smooth.
  4. Return the pear purée to the pressure cooker and add the sugar. Stir well and cook over low heat until the sugar fully dissolves.
  5. Now, introduce the remaining ingredients to the mix: orange slices, lemon slice, whole cloves, vanilla bean (remember to scrape out any clinging vanilla seeds with the back of a knife), cinnamon stick, ground cardamom, and a pinch of salt.
  6. Increase the heat to medium and allow the mixture to boil gently. Keep stirring for approximately 30 minutes, or until the pear butter thickens and easily forms a mound on a spoon.
  7. Before serving or storing, remove and discard the orange and lemon slices, cloves, and cinnamon stick. Also, remember to remove the vanilla pod and incorporate any remaining vanilla seeds into the pear butter.
  8. Once done, let the Vanilla-Spice Pear Butter cool, then refrigerate it, covered, for up to 10 days. If you want to enjoy this delightful spread later on, you can also freeze it for up to 4 months.
