INGREDIENTS:

  • 2 cups (360 g) uncooked basmati rice
  • 2 tbsp (28 g) vegan butter (nut-free and/or soy-free if needed)
  • 2 medium-sized yellow onions, peeled and chopped (about 2 cups [320 g])
  • 3 cloves garlic, peeled and minced, or 1 tbsp (9 g) jarred minced garlic
  • ½ tsp ground mustard
  • ½ tsp ground coriander
  • ¼ tsp ground turmeric
  • ½ tsp ground cumin
  • ¼ tsp freshly ground black pepper
  • ½ tsp salt, plus more to taste
  • 3 cups (720 ml) vegetable broth

 

INSTRUCTIONS:

  1. Begin by rinsing the basmati rice in a strainer until the water runs clear. Set the rinsed rice aside for later use.
  2. In a large saucepan, heat the vegan butter over medium heat until melted.
  3. Stir in the chopped yellow onions and allow them to cook for 5 to 7 minutes, or until they become translucent and tender.
  4. Add the minced garlic, ground mustard, ground coriander, ground turmeric, ground cumin, and freshly ground black pepper to the saucepan. Cook for an additional minute, or until the garlic becomes fragrant.
  5. Incorporate the rinsed basmati rice and salt into the spiced onion mixture. Stir constantly and cook for 1 minute, ensuring the rice is well-coated with the aromatic flavors.
  6. Pour in the vegetable broth and cover the saucepan with a lid. Increase the heat to high and bring the mixture to a boil. Once the mixture is boiling, give it a good stir to ensure even distribution of the ingredients.
  7. Lower the heat to its lowest setting, bringing the mixture to a gentle simmer. Keep the saucepan covered and allow it to simmer for a duration of 13 to 17 minutes. This will allow the rice to absorb the flavorful broth and cook to perfection.
  8. After the simmering time, remove the saucepan from the heat. Let the rice sit, covered, for an additional 10 minutes. This resting period allows the rice to achieve the ideal texture.
  9. Finally, fluff the rice with a fork to separate the grains. Taste and adjust the seasoning with more salt if desired.
