INGREDIENTS:

  • ¼ block extra firm tofu, pressed and sliced
  • 1 tbsp low-sodium soy sauce
  • ¼ tsp ground ginger
  • ¼ tsp garlic powder
  • Sriracha sauce, to taste
  • 2 cups cooked sushi rice
  • 2 sheets nori

 

Filling:

  • ¼ avocado, sliced
  • 3 tbsp mango, sliced
  • 1 green onion, finely chopped
  • 2 tbsp pickled ginger
  • 2 tbsp panko breadcrumbs

 

INSTRUCTIONS:

  1. In a large bowl, whisk together the low-sodium soy sauce, ground ginger, garlic powder, and desired amount of Sriracha sauce.
  2. Add the sliced tofu to the marinade, ensuring the tofu is well-coated. Allow it to marinate for 10 minutes.
  3. After marinating, transfer the tofu slices to the air fryer basket.
  4. Preheat the air fryer to 370 degrees F (185 degrees C) and cook the tofu on air fry mode for 15 minutes. Toss the tofu cubes after 8 minutes and continue cooking until they turn crispy.
  5. While the tofu is cooking, prepare the sushi assembly. Lay a nori sheet on a clean work surface and spread a layer of sushi rice evenly over it.
  6. Place marinated tofu slices and half of the other filling ingredients (avocado, mango, green onion, pickled ginger, and panko breadcrumbs) over the rice.
  7. Roll the nori sheet tightly, using a bamboo mat or your hands, to secure the filling inside.
  8. Repeat the same assembly steps to create another sushi roll.
  9. Carefully slice the rolls into bite-sized pieces using a sharp knife.
  10. Serve the Air Fryer Tofu Sushi Rolls with soy sauce, wasabi, and pickled ginger for dipping.
