tomatillo and avocado salsa

This salsa can be refrigerated in an airtight container for up to 2 days. It’s also tasty on pork tacos or with quesadillas.

YIELDS: About 1 cup

INGREDIENTS:

  • 3 tomatillos, husked, rinsed, and coarsely chopped
  • 1 ripe avocado, pitted, peeled, and coarsely chopped
  • 1/4 cup coarsely chopped fresh cilantro
  • 1 Tbs. freshly squeezed lime juice
  • 1/4 tsp. ground cumin
  • Kosher salt

 

INSTRUCTIONS:

  1. COMBINE THE INGREDIENTS: In a medium bowl, combine the tomatillos, avocado, cilantro, lime juice, and cumin. Season with salt to taste.
  2. SERVE: Serve alongside the black bean and poblano burgers.
