This salsa can be refrigerated in an airtight container for up to 2 days. It’s also tasty on pork tacos or with quesadillas.

INGREDIENTS:
- 3 tomatillos, husked, rinsed, and coarsely chopped
- 1 ripe avocado, pitted, peeled, and coarsely chopped
- 1/4 cup coarsely chopped fresh cilantro
- 1 Tbs. freshly squeezed lime juice
- 1/4 tsp. ground cumin
- Kosher salt
INSTRUCTIONS:
- COMBINE THE INGREDIENTS: In a medium bowl, combine the tomatillos, avocado, cilantro, lime juice, and cumin. Season with salt to taste.
- SERVE: Serve alongside the black bean and poblano burgers.
