INGREDIENTS:

  • 4 stalks lemongrass, bruised and cut into 1⁄2-inch (1cm) lengths
  • 7oz (200g) galangal, peeled and diced
  • 5 lime leaves, bruised
  • 1 chicken leg
  • 2 cups (500ml) water
  • 2 small red chiles
  • 1 quart (1 liter) coconut milk
  • 1 tbsp nam pla or Asian fish sauce
  • Juice of 3 limes
  • 3 scallions, finely chopped
  • 2 tbsp chopped cilantro

 

INSTRUCTIONS:

  1. In a large pan, combine the lemongrass, galangal, lime leaves, chicken leg, and water. Bring the mixture to a boil. Allow it to simmer, uncovered, for approximately 30 minutes or until the chicken is fully cooked. Remove the chicken leg with a slotted spoon, dice the flesh, and set it aside, discarding the skin and bones.
  2. Add the small red chiles to the pan, and bring the soup back to a boil. Pour in the coconut milk, and heat the mixture slowly. You want the soup to become hot enough for the flavors to infuse the coconut milk without allowing it to come to a boil.
  3. Strain the soup into a clean pan or tureen. Retrieve the chiles from the sieve, and cut them into slivers. Add the nam pla (or Asian fish sauce), lime juice, scallions, cilantro, and diced chicken to the soup. Taste to check the seasoning and adjust if necessary.
  4. Serve the Thai chicken soup garnished with the slivers of chile. Enjoy the rich and fragrant flavors of this delightful soup!

 

NOTE:

  • No extra salt should be necessary due to the saltiness of the nam pla (Asian fish sauce).
