INGREDIENTS:

  • 2 tablespoons unsalted butter, plus more for the pan
  • 4 ounces unsweetened chocolate, chopped
  • 1 cup cream
  • 1 1/2 cups sugar
  • 4 tablespoons cocoa powder
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1/2 to 1 cup chopped (not minced) walnuts or pecans (optional)

 

INSTRUCTIONS:

  1. Allow the butter to come to room temperature. Grease a 9-inch square baking pan with butter and line it with foil.
  2. In a medium saucepan over low heat, combine the chopped chocolate and cream. Stir constantly until the mixture is well blended and smooth.
  3. Add the sugar and salt to the saucepan, still over low heat, and continue stirring until the mixture comes to a boil.
  4. Stop stirring and cook the mixture until it reaches 236°F on a candy thermometer. Alternatively, you can test the readiness by dropping a small piece into a glass of cold water – it should form a soft ball.
  5. Immediately remove the saucepan from the heat. Add the butter to the mixture without beating it. Allow the mixture to cool until it is just lukewarm.
  6. Add the vanilla extract to the saucepan and beat the mixture vigorously with a wooden spoon until it becomes smooth and loses its sheen, which should take about 5 minutes.
  7. If desired, add the chopped nuts to the mixture and stir until well combined.
  8. Scrape the fudge mixture into the prepared pan. Once it has hardened, lift the foil out of the pan, peel it off, and cut the fudge into squares.
  9. Wrap the fudge squares well and refrigerate. Fudge can be stored for weeks, but it is best enjoyed when fresh.

 

VARIATION:

  • Peanut or Other Nut Fudge: Substitute peanut or any other nut butter for the chocolate to create a different variation of nut fudge.
