INGREDIENTS:

  • 1 cup dried black-eyed peas
  • 8 cups water
  • 1 pound cooked corn kernels
  • 1/2 onion, diced
  • 1/2 bell pepper, diced
  • 1 pickled jalapeño, finely chopped
  • 1 medium tomato, diced
  • 2 tablespoons fresh cilantro
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin

 

INSTRUCTIONS:

  1. Rinse and soak the black-eyed peas in 4 cups of water for 1 hour. Drain and rinse.
  2. Add the soaked black-eyed peas and the remaining 4 cups of water to the pressure cooker. Lock the lid into place and bring to high pressure. Maintain high pressure for 11 minutes. Remove from heat and allow the pressure to release naturally.
  3. Drain the cooked black-eyed peas and transfer them to a large mixing bowl.
  4. Add the cooked corn kernels, diced onion, diced bell pepper, finely chopped pickled jalapeño, diced tomato, and fresh cilantro to the bowl with the black-eyed peas.
  5. In a separate bowl, whisk together the red wine vinegar, olive oil, salt, black pepper, and ground cumin to create the dressing.
  6. Pour the dressing over the black-eyed pea mixture and toss until all the ingredients are well combined.
  7. Refrigerate the Texas Caviar for 1-2 hours before serving to allow the flavors to meld together.
  8. Serve the Texas Caviar as a dip with tortilla chips, as a salad, or as a flavorful side dish.

 

NOTE:
