Adding crisp red bell pepper during the final minutes of steaming adds a delightful crunch to the salad. Tossed in a seasoned vinegar mixture and finished with a zesty vinaigrette, scallions, and fresh parsley, this salad is a delicious addition to any gathering.

 

SERVES 4 TO 6

 

INGREDIENTS:

  • 2 pounds sweet potatoes, peeled and cut into ¾-inch pieces
  • 1 red bell pepper, stemmed, seeded, and chopped fine
  • 2½ tablespoons cider vinegar
  • 1½ tablespoons Dijon mustard
  • Pinch of cayenne pepper
  • ¼ cup extra-virgin olive oil
  • 2 scallions, sliced thin
  • 2 tablespoons minced fresh parsley

 

INSTRUCTIONS:

  1. Fill a Dutch oven with 1 inch of water and bring it to a boil over high heat. Reduce the heat to medium-low and carefully lower a steamer basket into the pot. Add the sweet potatoes to the basket, cover, and steam until they are nearly tender, which takes about 15 minutes.
  2. During the final minutes of cooking the sweet potatoes, add the chopped red bell pepper to the steamer basket. Cover and continue steaming until both the sweet potatoes and bell pepper are tender, which should take around 2 to 4 minutes. Transfer the steamed vegetables to a large bowl.
  3. In a small bowl, whisk together cider vinegar, Dijon mustard, cayenne pepper, ½ teaspoon of salt, and ¼ teaspoon of pepper. Drizzle half of this vinegar mixture over the steamed vegetables, gently toss to combine, and refrigerate until the vegetables are cool, approximately 45 minutes.
  4. While the vegetables are chilling, whisk the extra-virgin olive oil into the remaining vinegar mixture, creating the vinaigrette. Gently stir this vinaigrette into the chilled vegetables. Add the sliced scallions and minced fresh parsley, season with salt and pepper to taste, and serve.
