  • 6 large green peppers

  • 1 tablespoon Crisco (vegetable shortening)

  1. Prepare the Green Peppers:
    • Cut the tops off the 6 large green peppers and remove the seeds, creating hollow pepper “shells” to be stuffed.
  2. Prepare the Filling:
    • In a mixing bowl, combine 1 pint of boiled rice with 1 medium-sized onion and 1 tomato, both finely chopped. Season the filling with 1 teaspoon of salt and mix thoroughly.
  3. Stuff the Peppers:
    • Wash the hollowed-out green peppers.
    • Stuff each pepper with the boiled rice and vegetable filling. Pack the filling into the peppers tightly.
  4. Replace the Tops:
    • After filling the peppers, place their tops back on as “lids,” covering the stuffed rice.
  5. Arrange in a Baking Pan:
    • Stand the stuffed green peppers upright in a baking pan.
  6. Prepare the Basting Liquid:
    • Cover the bottom of the baking pan with a little water. Add 1 tablespoon of Crisco (vegetable shortening) to the water.
  7. Bake:
    • Bake the stuffed green peppers in a preheated, quick oven for approximately 20 minutes. During baking, baste the peppers 2 or 3 times with the liquid in the pan.
