The trick to a sexy dinner is not slaving over a sweaty stove—it’s getting in and out of the kitchen fast. These noodles can be plated in about fifteen minutes flat. And in warm weather, you can stick them in the fridge for twenty minutes before you eat because they also taste great cold.

INGREDIENTS:
- Salt
- One 12-ounce package soba, udon, or lo-mein noodles
- 2 tablespoons peanut butter (either chunky or smooth, up to you!)
- ½ teaspoon red pepper flakes
- 2 teaspoons honey
- 2 teaspoons fresh lime juice
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- ¼ cup chopped fresh cilantro, or more to taste
- 2 to 3 scallions, chopped
- 1 teaspoon black sesame seeds (optional)
- Freshly ground pepper
INSTRUCTIONS:
- Bring a large pot of water to a boil and add a large pinch of salt. Add the noodles and cook according to package instructions until al dente. Drain.
- Meanwhile, in a blender or mini food processor, mix the peanut butter, red pepper flakes, honey, lime juice, soy sauce, sesame oil, and 1 tablespoon water.
- While the noodles are still warm, toss them with the sauce, cilantro, and scallions. Sprinkle with black sesame seeds, if using. Add salt and pepper to taste. Serve warm or chilled.
