INGREDIENTS:

  • An 8-to 10-quart enameled kettle with cover (or a suitable alternative)
  • 2 cups light, dry white wine or 1 cup dry white vermouth
  • 8 parsley sprigs
  • 1/2 cup minced shallots, green onions, or very finely minced onions
  • 1/4 teaspoon thyme
  • 1/2 bay leaf
  • 6 tablespoons butter
  • 1/8 teaspoon pepper
  • 1/2 cup roughly chopped parsley
  • 6 quarts scrubbed, soaked mussels

 

INSTRUCTIONS:

  1. Bring all the ingredients, except for the last two, to a boil in the kettle. Allow them to boil for 2 to 3 minutes, which will help evaporate the alcohol and slightly reduce the volume.
  2. Add the mussels to the kettle and tightly cover it. Boil the mussels quickly over high heat.
  3. Grasp the kettle with both hands, clamping your thumbs to the cover. With an up and down, slightly jerky motion, toss the mussels in the kettle. This will ensure that the mussels change levels and cook evenly.
  4. After approximately 5 minutes, the shells of the mussels will swing open, indicating that they are cooked to perfection.
  5. Using a large skimmer, carefully transfer the cooked mussels to wide soup plates.
  6. Allow the cooking liquid to settle for a moment so that any sand or sediment can sink to the bottom.
  7. Ladle the flavorful cooking liquid over the mussels, sprinkle them with the roughly chopped parsley, and serve immediately.
