Neapolitan spaghetti is a classic Italian dish that’s rich in flavor and incredibly satisfying. The combination of perfectly cooked spaghetti and the flavorful Neapolitan sauce is a winning duo that will transport your taste buds to the heart of Italy. INGREDIENTS:

  • 1 lb of spaghetti
  • 1 cup of good olive oil
  • 2 green peppers, seeded and chopped
  • 4 to 6 cloves of garlic, cut fine
  • 4 large tomatoes, peeled, quartered, and thinly sliced
  • Salt to taste
  • Paprika to taste
  • Freshly grated Parmesan cheese for garnish

 

INSTRUCTIONS:

  1. Prepare the Spaghetti: Start by breaking 1 lb of spaghetti into 3 or 4 inch lengths. Fill a large saucepan with plenty of water and bring it to a boil. Add a generous amount of salt to the boiling water. Once the water is boiling vigorously, add the broken spaghetti and cook for approximately half an hour. You want the spaghetti to be cooked until it’s tender but still slightly firm (al dente).
  2. Prepare the Sauce: While the spaghetti is cooking, it’s time to prepare the Neapolitan sauce. In a frying pan, heat 1 cup of good olive oil over medium heat. Once the oil is hot, add the chopped green peppers. Sauté them until they begin to brown.
  3. Add Garlic and Tomatoes: Next, add 4 to 6 cloves of finely cut garlic to the pan with the sautéed green peppers. Continue to cook and stir until the garlic becomes aromatic and starts to release its flavor.
  4. Incorporate the Tomatoes: Add the quartered and thinly sliced tomatoes to the pan. Stir everything together. Allow the mixture to simmer gently for about half an hour, or until the oil is thoroughly absorbed by the tomatoes, and the sauce reaches a thick consistency. Remember to stir the sauce occasionally to prevent burning.
  5. Season the Sauce: Once the sauce has reached the desired consistency, season it with salt and paprika. Adjust the seasoning to suit your taste. The paprika will add a subtle hint of smokiness and a touch of color to the sauce.
  6. Drain the Spaghetti: By now, the spaghetti should be perfectly cooked. Drain the spaghetti thoroughly to remove excess water.
  7. Combine Sauce and Spaghetti: Transfer the drained spaghetti to a large platter. Pour the Neapolitan sauce over the cooked spaghetti. Make sure to mix the sauce through the spaghetti evenly to coat it thoroughly.
  8. Garnish and Serve: To finish off the dish, sprinkle the Neapolitan spaghetti with freshly grated Parmesan cheese. The cheese will add a creamy richness and depth of flavor to the dish.
