INGREDIENTS:

  • 1/2 head (about 1/2 pound) Napa cabbage
  • 1/2 carrot, grated
  • 1 small red onion, julienned
  • 1 small Thai “bird” chili or jalapeño pepper, finely chopped
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon vegetable oil
  • A few drops of sesame oil
  • 1/4 teaspoon salt

 

INSTRUCTIONS:

  1. Shred the cabbage as fine as you possibly can, using a knife, mandoline, or slicing machine. Combine with carrot, onion, chili pepper, and cilantro.
  2. Dress with lime, rice vinegar, sugar, vegetable oil, sesame oil, and salt; toss thoroughly.
  3. Refrigerate for at least 30 minutes before serving.
