Southwestern Beef Burritos are a delightful Mexican-inspired dish that became a favorite for Jacqueline Hergert in Payson, Arizona, after moving from the Midwest. This delectable recipe, passed down by her brother-in-law, who ran a Mexican restaurant, brings together tender beef top round steak and a savory mix of enchilada sauce, tomatoes, green chilies, onions, and garlic.

The beef is first browned to perfection in canola oil, then simmered in a flavorful medley of enchilada sauce, diced tomatoes, and chopped green chilies, creating a rich and robust filling. The slow cooking process ensures that the meat becomes tender and infused with the Southwestern flavors.

Wrapped in warm flour tortillas and garnished with diced tomatoes, sliced ripe olives, shredded cheddar cheese, sour cream, chopped green onions, shredded lettuce, and guacamole, these Southwestern Beef Burritos make for a satisfying and customizable meal that is perfect for gatherings and family dinners.

With just 15 minutes of prep time and 2¼ hours of cooking, these mouthwatering burritos are a surefire hit for 8 servings of deliciousness.
