Slow-Roasted Garlic and Tomato Sauce

INGREDIENTS:

  • 2 tablespoons olive oil
  • 2 1/2 pounds fresh, vine-ripened tomatoes, peeled and diced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon granulated cane sugar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 3 heads roasted garlic, cloves removed from peel

 

INSTRUCTIONS:

  1. Begin by preparing the roasted garlic. Cut off the top of each garlic head, drizzle them with olive oil, and then wrap each head in aluminum foil. Roast the wrapped garlic heads in an oven preheated to 400°F for about 45 minutes, or until the garlic cloves become soft and fragrant.
  2. In a 4-quart slow cooker, combine all the remaining ingredients: the diced fresh tomatoes, dried parsley, dried basil, balsamic vinegar, granulated cane sugar, salt, and freshly ground black pepper.
  3. Once the roasted garlic heads are done, carefully remove the cloves from their peels. You should be left with soft, caramelized garlic cloves.
  4. Add the roasted garlic cloves to the slow cooker with the tomato mixture.
  5. Cover the slow cooker and set it to cook on low for 3 to 4 hours. This slow-roasting process allows the flavors to meld together, creating a rich and aromatic sauce.
