MAKES: ABOUT 2 CUPS

 

INGREDIENTS:

  • 2 tablespoons olive oil
  • 2 cups chopped peeled tangy apples, such as Granny Smith or Jonathan
  • ¾ cup diced red onion
  • 2 teaspoons minced garlic
  • 1 cup dry sherry
  • ¼ cup packed light brown sugar
  • ¼ teaspoon kosher salt or coarse sea salt, or more to taste

 

INSTRUCTIONS:

  1. Warm the oil in a saucepan over medium heat.
  2. Stir in the chopped apples, diced red onion, and minced garlic. Cook the mixture until the apples and onions are soft, which usually takes about 10 minutes. Stir occasionally to prevent sticking. If the mixture seems dry, you can add a tablespoon or two of water to keep it moist, as different types of apples may have varying moisture levels.
  3. Once the apple and onion mixture is soft, add the dry sherry, brown sugar, and salt to the pan. Stir well to combine.
  4. Bring the mixture to a simmer, and then reduce the heat to low. Continue cooking until the mixture reaches a jammy consistency, which takes around 10 more minutes.
  5. Serve the conserva warm or at room temperature. It pairs well with a variety of dishes, from meats to cheeses. You can store any leftovers in a covered container in the refrigerator, and it should keep well for at least a week. Before serving again, reheat the conserva to enjoy its delightful flavors.
