INGREDIENTS:

  • 2 lbs beef chuck steak, diced
  • 1/2 cup coriander, chopped
  • 2 cardamom pods
  • 1 cinnamon stick
  • 14 oz can tomatoes, diced
  • 1/4 cup curry paste
  • 1 red chili, chopped
  • 1 tsp ginger, grated
  • 2 garlic cloves, crushed
  • 1 large onion, sliced
  • 2 tbsp vegetable oil
  • 1/4 cup plain flour

 

PREPARATIONS:

  1. Place the beef and flour in a ziplock bag. Shake the bag well to coat the beef in the flour.
  2. Heat vegetable oil in a saucepan over medium heat. Add the beef to the saucepan and cook for 3-4 minutes, or until lightly browned. Transfer the beef to the slow cooker.
  3. In the same saucepan, add the onion, ginger, and garlic. Sauté for 4 minutes until fragrant and slightly softened.
  4. Add the curry paste and chopped chili to the saucepan. Stir for 1 minute to release the flavors of the spices.
  5. Add 3/4 cup water, diced tomatoes, cardamom pods, and cinnamon stick to the saucepan. Stir well to combine.
  6. Transfer the mixture from the saucepan into the slow cooker with the beef.
  7. Cover the slow cooker and cook on low for 5 1/2 hours, or until the beef is tender.
  8. Stir in the chopped coriander just before serving.
