INGREDIENTS:
- 3 strips of crumbled cooked bacon
- 6 eggs
- 2 tbsp coconut oil or butter
- 1 tbsp butter
- 1/4 cup softened cream cheese
- 1/4 cup shredded Gouda cheese
- Garlic and onion powder
- Black or white pepper
INSTRUCTIONS:
- Melt the butter in a small bowl and set it aside. In a separate bowl, beat the eggs and add in the garlic and onion powder, as well as black or white pepper to taste.
- Heat some butter in a non-stick skillet over medium heat and scramble the eggs until cooked through.
- Transfer the cooked eggs to a large bowl. Add the softened cream cheese and shredded Gouda cheese to the eggs, and mix well.
- Stir in the crumbled cooked bacon. Add the melted butter and coconut oil to the mixture.
- Pour the batter into mini muffin liners placed on a cookie sheet, with or without wax paper. Alternatively, you can grease the muffin tin directly. Freeze the muffins for about 30 minutes until they set.
- Serve and enjoy!
