INGREDIENTS:

  • 2 cups (184 g) textured vegetable protein (TVP)
  • 2 cups (480 ml) boiling water
  • 1 tbsp (15 ml) olive oil
  • ⅓ red bell pepper, seeded and chopped (about ⅓ cup [49 g])
  • ⅓ medium-sized white onion, chopped (about ⅓ cup [53 g])
  • 3 cloves garlic, peeled and minced, or 1 tbsp (9 g) jarred minced garlic
  • 3 tbsp (50 g) tomato paste
  • ⅓ cup (80 ml) vegetable broth
  • ¾ cup (180 g) ketchup
  • 1 tbsp (15 ml) hot sauce
  • ¼ cup (60 ml) vegan Worcestershire sauce (gluten-free if needed)
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp (27 g) packed light brown sugar
  • 1 tbsp (15 ml) apple cider vinegar
  • ¼ tsp salt, plus more to taste
  • ⅛ tsp freshly ground black pepper, plus more to taste

 

FOR SERVING

  • 6 to 8 vegan burger buns (gluten-free if needed)

 

INSTRUCTIONS:

  1. Place the textured vegetable protein into a large, heat-resistant bowl. Pour the boiling water over it and stir until combined. Set aside.
  2. In a large sauté pan, heat the olive oil over medium-low heat. Add the bell pepper and onion and cook, stirring often, for 5 to 7 minutes, or until the onion is translucent and the bell pepper is fork-tender.
  3. Stir in the garlic and cook for another 30 seconds to 1 minute, or until fragrant. Stir in the tomato paste until the veggies are coated.
  4. Stir in the prepared textured vegetable protein. Cook, stirring, for 1 to 2 minutes, or until lightly sautéed.
  5. Stir in the rest of the ingredients – vegetable broth, ketchup, hot sauce, vegan Worcestershire sauce, chili powder, garlic powder, onion powder, brown sugar, apple cider vinegar, salt, and black pepper.
  6. Cook the mixture, stirring occasionally, for about 10 minutes, or until thickened. Add more salt and black pepper, if desired.
  7. Assemble the Sloppy Joes by scooping your desired amount of the TVP mixture onto each burger bun.
