INGREDIENTS:
- 1 medium onion, cut into ½-inch slices
- ½ cup buttermilk
- 1 cup mayonnaise
- ½ cup sour cream
- 1 teaspoon Worcestershire sauce
- ½ teaspoon white vinegar
- 2 tablespoons minced flat-leaf parsley
- 1 tablespoon minced fresh chives or dill
- Kosher salt or coarse sea salt
INSTRUCTIONS:
- Preheat the oven to 400°F. Lay the onion slices on a baking sheet and spritz them lightly on both sides with vegetable oil spray. Bake the onions until they begin to color and soften, then stir and turn to roast evenly, 12 to 15 minutes total. Let the onions cool briefly.
- Place the onion slices and buttermilk in a food processor and puree. Stop the processor and add the mayonnaise, sour cream, Worcestershire sauce, and vinegar. Pulse the mixture until well combined.
- Stir in the minced parsley and chives or dill. Add salt to taste.
- Cover the dressing and store it in the refrigerator for at least 30 minutes or up to a week to allow the flavors to meld.
