  • 1 cup cornmeal

  • 2 eggs, beaten, or 2 teaspoons cornstarch mixed with 2 tablespoons water
  • 2 quarts canola oil, for frying
  • Salt and pepper, to taste

 

INSTRUCTIONS:

  1. Prepare and Soak Red Beans: Begin by rinsing the red beans thoroughly to remove any impurities. Place the rinsed beans in a large pressure cooker.
  2. Pressure Cook the Beans (First Round): Add 4 cups of water to the pressure cooker with the red beans. Lock the lid into place and bring the cooker to high pressure for 1 minute. Afterward, remove it from heat and perform a quick-release of the pressure.
  3. Drain and Soak Again: Drain the water from the pressure cooker, rinse the beans once more, and then return them to the pressure cooker with the remaining 4 cups of water. Allow the beans to soak in this water for about 1 hour.
  4. Season and Pressure Cook (Second Round): Add the olive oil and salt to the soaked beans in the pressure cooker. Lock the lid into place and bring it to high pressure. Maintain high pressure for 11 minutes, then remove the cooker from heat and let the pressure release naturally. The beans should be tender and flavorful.
  5. Prepare the Fritter Mixture: While the beans are cooking, you can prepare the mixture that will form the fritters. In a bowl, combine the minced jalapeño, diced onion, minced garlic, cilantro, and the cooked red beans. This mixture provides a burst of flavor and texture to the fritters.
  6. Create the Fritter Batter: In a separate bowl, create the fritter batter. Combine the flour, cornmeal, baking powder, heavy cream or soymilk, and beaten eggs (or cornstarch mixture). Stir until all the ingredients are well combined.
