Puerto Rican Gandules (Pigeon Peas)

  • 1 1/2 cups pigeon peas, soaked overnight, rinsed, and drained

  • 1/2 green pepper, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/2 cup chopped fresh thyme or 1 tablespoon dried
  • 1 medium tomato, seeded and chopped

 

INSTRUCTIONS:

  • The night before you plan to prepare this dish, place the pigeon peas in a bowl, cover them with water, and allow them to soak overnight. On the day of cooking, rinse and drain the soaked peas.
  • In a large pot, add the soaked and drained pigeon peas along with 4 cups of water. Simmer the peas over medium heat for approximately 1 hour or until they are tender and soft.
  • In a separate skillet, heat the olive oil over medium heat.
  • Add the chopped Spanish onion, green pepper, minced garlic, bay leaves, salt, black pepper, and thyme to the skillet. Sauté the mixture until the onion becomes translucent, which should take around 5 minutes.
  • Incorporate the chopped tomato into the skillet and cook for an additional 2 minutes.
  • Add the aromatic vegetable mixture to the pot with the simmering pigeon peas. Let these ingredients simmer together for an additional 45 minutes. This allows the flavors to meld, and the pigeon peas to become even softer.
  • Your Puerto Rican Gandules are now ready to be enjoyed. Traditionally, they are served over a bed of white or yellow rice.
