INGREDIENTS:

  • 11/2–21/4 lb (675g–1kg) salmon or white fish bones, heads, and skin (avoid dark, oily fish)
  • 6 black peppercorns
  • 1 sprig of thyme
  • 1 bay leaf
  • 2 parsley stems
  • 2 small carrots, coarsely chopped
  • 1 onion, coarsely chopped
  • 2 celery ribs, coarsely chopped
  • 1 cup (250ml) dry white wine
  • 13/4 quarts (1.7 liters) cold water

 

INSTRUCTIONS:

  1. Place the fish heads and bones into a large pan. If needed, break or cut them to fit the pan. Add the black peppercorns, thyme, bay leaf, and parsley.
  2. Incorporate the chopped vegetables into the pot along with the dry white wine. Set the pan over medium-high heat, allowing the wine to bubble for about 3 minutes. Pour in the cold water and bring the mixture to a boil.
  3. Reduce the heat to a gentle simmer and leave the stock uncovered. Allow it to simmer for 20 to 25 minutes. Avoid extended simmering, as it might lead to a bitter taste. Use a slotted spoon to skim off any white foam that forms on the surface during this time.
  4. Strain the stock through a fine sieve into a bowl. Press the solids against the side of the sieve to extract all the flavorful liquid.
  5. Let the strained fish stock cool completely.

 

NOTE:

You can refrigerate it in a covered container for up to 3 days, or freeze it well-wrapped for up to 2 months.
