The dish begins with a roux, a mixture of bacon and flour that adds depth and thickness to the sauce. The addition of onions, peppers, okra, and tomatoes further enhances the flavors. Finally, the prawns are cooked until tender and combined with the sauce to create a delicious and satisfying meal. Serve the prawn gumbo hot, alongside steamed rice or crusty bread for a complete and satisfying dining experience.

INGREDIENTS:

  • 50ml/2fl oz vegetable oil, plus 2 tablespoons extra
  • 6 rashers bacon, finely chopped
  • 2 1/2 tablespoons plain flour
  • 2 onions, finely chopped
  • 1/2 teaspoon cayenne pepper
  • 1 red pepper, seeded and chopped
  • 1 green pepper, seeded and chopped
  • 16 okra, trimmed, halved lengthways
  • 1 bay leaf
  • 850g/13 3/4lb canned tomatoes
  • 900g/2lb raw prawns, peeled and deveined, but with tails left intact
  • 1 teaspoon Tabasco sauce
  • Salt and freshly ground black pepper

PREPARATIONS:

  1. Heat 50ml/2fl oz of vegetable oil in a large saucepan over medium heat. Add the finely chopped bacon and cook for 5 minutes, stirring occasionally.
  2. Stir in the plain flour and continue cooking, stirring constantly, until the flour turns nutty brown. Remove the bacon-flour mixture from the pan. This is the roux, which will thicken and flavor the gumbo.
  3. Heat the extra 2 tablespoons of vegetable oil in the same saucepan. Add the finely chopped onions, cayenne pepper, and chopped red and green peppers. Cook over medium heat, stirring occasionally, for about 5 minutes or until the onions are golden brown.
  4. Add the trimmed and halved okra, bay leaf, and canned tomatoes to the saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes. If the mixture becomes too thick, you can add water to adjust the consistency.
  5. Stir in the peeled and deveined raw prawns and the roux mixture. Add the Tabasco sauce and season with salt and freshly ground black pepper. Cook for an additional 5 minutes or until the prawns are cooked through.
  6. Serve the prawn gumbo hot, allowing the flavors to meld together. Consider serving it with steamed rice or crusty bread to soak up the flavorful sauce.

YIELD:

SPECIAL INSTRUCTIONS:

  • Take care not to burn the roux when cooking it, as it can give a bitter taste to the gumbo. Stir constantly and adjust the heat as needed.
  • Adjust the level of spiciness to your taste by increasing or reducing the amount of cayenne pepper and Tabasco sauce.
  • Feel free to add additional vegetables, such as celery or diced tomatoes, to customize the gumbo to your preference.
  • Make sure the prawns are cooked through but not overcooked to maintain their tenderness and flavor.

TIPS:

  • Serve the prawn gumbo with a side of steamed rice or crusty bread to soak up the delicious sauce.
  • Garnish with fresh parsley or green onions for a pop of color and added freshness.
  • The gumbo can be made ahead of time and reheated for convenience, allowing the flavors to develop further.
  • Consider adding other seafood, such as crab or mussels, to create a seafood medley gumbo.
