INSTRUCTIONS:

  1. In a mixing bowl, whisk together the flour and eggs until they form a smooth paste. Gradually add the milk, olive oil, and kosher salt to the mixture. Continue whisking until all the ingredients are well combined. The result should be a thin, smooth batter.
  2. Heat a 10-inch nonstick skillet over medium heat. Add a small amount of butter to the pan and use a brush or the corner of a towel to spread it evenly. This step prevents the crepes from sticking to the pan and adds a delightful buttery flavor.
  3. Pour approximately 1/4 cup of the batter into the skillet. Quickly lift the skillet off the heat and tilt it in a circular motion to spread the batter evenly across the bottom. This creates a thin layer of batter.
  4. Allow the crepe to cook undisturbed until the edges become visibly brown. You can gently lift the edge of the crepe with a wooden or rubber spatula to check its doneness. Once it’s browned, it’s time to flip.
  5. Use your fingers or a wooden spoon to flip the crepe. The second side will cook faster, typically around 30 seconds. Once both sides have a light golden color, slide the crepe onto a plate. You can stack crepes on top of each other while keeping them warm.
  6. Continue the process with the remaining batter, adding a bit of butter to the skillet before each crepe. Remember to tilt the skillet to spread the batter evenly for each one.
