INGREDIENTS:

  • 8 cups (about 3 pounds) plums, pitted and cut in half
  • 1 small sweet onion, diced
  • 1 cup water
  • 1 teaspoon fresh ginger, peeled and minced
  • 1 clove garlic, minced
  • 1/2 cup granulated sugar
  • 1/2 cup rice vinegar or cider vinegar
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cloves

 

INSTRUCTIONS:

  1. Begin by adding the plums, diced sweet onion, water, fresh ginger, and minced garlic to the pressure cooker.
  2. Lock the pressure cooker lid into place and bring it to low pressure. Maintain this low pressure for 5 minutes to soften the ingredients. Afterward, remove the pressure cooker from the heat source and perform a quick pressure release to safely open the lid.
  3. Using an immersion blender, carefully pulverize the contents of the pressure cooker until you have a smooth mixture. Alternatively, you can press the cooked plum mixture through a sieve to achieve a smooth consistency.
  4. Return the liquefied and strained plum mixture to the pressure cooker. Stir in the granulated sugar, vinegar, ground coriander, salt, cinnamon, cayenne pepper, and ground cloves. These ingredients will infuse the sauce with its sweet, tangy, and aromatic flavors.
  5. Lock the pressure cooker lid into place again and bring it to low pressure. Maintain this low pressure for 5 minutes to meld the flavors. Once the cooking is complete, remove the pressure cooker from the heat source and perform another quick pressure release.
  6. Check the consistency of the sauce; it should resemble the texture of applesauce. If it’s not yet thick enough to your liking, place the uncovered pressure cooker over medium heat and simmer until it reaches your desired consistency.
