MAKES: ABOUT 2 CUPS

 

INGREDIENTS:

  • 1 cup shelled unsalted pistachios
  • 1 cup packed fresh mint leaves
  • 1 garlic clove
  • 1 tablespoon fresh lemon juice
  • ¾ cup olive oil
  • ½ teaspoon crushed hot red chile flakes
  • ½ teaspoon kosher salt or coarse sea salt, or more to taste

 

INSTRUCTIONS:

  1. Prepare the Pesto:
    • Place the shelled unsalted pistachios, packed fresh mint leaves, and garlic clove in a food processor.
    • Process the ingredients until they are finely chopped and well combined.
  2. Add Lemon Juice and Oil:
    • With the food processor running, pour in the fresh lemon juice to the mixture.
    • Gradually pour in the olive oil in a slow, steady stream while the processor is still running. Continue until the mixture is well combined and forms a cohesive pesto.
  3. Incorporate Seasonings:
    • Once the pistachio-mint mixture is well combined, add the crushed hot red chile flakes and kosher salt (or coarse sea salt) to the processor.
    • Process the mixture again until the seasonings are evenly distributed. Taste the pesto and adjust the salt if necessary.
  4. Serve and Store:
    • The pistachio-mint pesto is best used at room temperature.
    • Spoon the pesto over dishes like lamb, venison, or rabbit for a burst of flavor.
    • To store any leftovers, transfer the pesto to a container and cover it with a thin film of additional olive oil. Seal the container and refrigerate for up to 3 weeks.
