COOK TIME: 2 minutes, plus time to boil pasta

 

YIELD: 6 to 8 servings

 

INGREDIENTS:

  • 1 (16-oz [453-g]) package penne or pasta of choice (gluten-free if needed)
  • 1 tbsp (15 ml) olive oil
  • 1½ cups (390 g) vegan Pesto (1 batch) or store-bought (nut-free if needed)
  • ¼ cup (20 g) nutritional yeast
  • ½ tsp salt, plus more to taste
  • ⅛ tsp freshly ground black pepper, plus more to taste
  • Vegan Parmesan Cheese or store-bought, for topping (nut-free and/or soy-free if needed)

 

INSTRUCTIONS:

  1. Cook the pasta:
    • Cook the penne or chosen pasta according to the package instructions.
    • Once cooked, drain and rinse the pasta in cold water, then rinse it with hot water to reheat.
  2. Prepare the pasta:
    • Add the olive oil to the empty pasta pot over low heat.
    • Stir in the cooked pasta to lightly coat it with oil.
  3. Add the pesto and seasonings:
    • Add the vegan Pesto to the pasta in the pot. If using store-bought pesto, ensure it’s nut-free if needed.
    • Sprinkle in the nutritional yeast, ½ tsp of salt, and ⅛ tsp of freshly ground black pepper.
    • Stir the pasta until it’s well coated with the pesto and seasonings.
  4. Adjust the seasoning and serve:
    • Remove the pot from the heat.
    • Taste and adjust the seasoning, adding more salt and pepper to taste if desired.
  5. Serve the Pesto Pasta:
    • Serve the Pesto Pasta immediately, ideally while it’s still warm.
    • Top each serving with a sprinkle of Vegan Parmesan Cheese or store-bought vegan Parmesan substitute.
